Spanish Lemon Madeleines

Ingredients:

- 3 eggs

- 150g sugar

- 125g melted butter

- Pinch of salt

- Zest of 1 lemon

- 2 tablespoons lemon juice

- 150g flour

- 1/2 teaspoon baking powder

Instructions:

1. Preheat: Preheat your oven to 180°C (350°F). Grease and flour a madeleine pan.

2. Cream eggs and sugar: In a bowl, beat the eggs and sugar until light and fluffy.

3. Add wet ingredients: Stir in the melted butter.

4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Add lemon: Stir in the lemon zest and juice.

6. Bake: Fill the prepared molds about halfway full. Bake for 10-12 minutes, or until golden brown and puffed up.

7. Cool: Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
